Before separating, recite the blessing:
בָּרוּךְ אַתָּה יְיָ אֱלֹהֵינוּ מֶלֶךְ הָעוֹלָם, אֲשֶׁר קִדְּשָׁנוּ בְּמִצְוֹתָיו וְצִוָּנוּ לְהַפְרִישׁ חַלָּה.
Blessed are You, Lord our God, King of the universe, who has sanctified us with His commandments and commanded us to separate challah.
נוטלים חתיכה מן העיסה ואומרים:
Take a piece of the dough and say:
הֲרֵי זוֹ חַלָּה:
Behold, this is challah.
